Zillertaler farmers bread

Zillertal homemade cooking - we'll tell you how the farmers bread is guaranteed to be a success.

Ingredients:

  • 500g rye flour
  • 500g wheat flour
  • 1 cube of fresh yeast
  • 1 tablespoon of salt
  • 1 pinch of sugar
  • 20-30g bread spice (fennel, coriander, caraway)
  • 700ml lukewarm water
  • 1 egg for brushing

Preparation:

Mix the rye and wheat flour in a bowl. Form a well in the middle. Dissolve the yeast in a little lukewarm water and add it to the flour. Leave for about 10 minutes.

Gradually add the bread spice, salt, sugar and the remaining water. Knead until the dough pulls away from the bowl and is nice and smooth. Cover with a cloth and let rise in a warm place for about an hour.

Divide the dough in two on a floured, smooth surface and shape into loaves. Place them on a greased baking sheet and brush with beaten egg.

Place in the oven preheated to 180-200 degrees. Bake for about 40 minutes with top and bottom heat. Test: Turn the bread over and tap it - if it sounds hollow - the bread is done!
